Ingredients
Andouille Smoked Sausage
Or any sausage link you like
8-12 oz
Mini Sweet Peppers
3-4 Whole
Onion
1/2 Whole
Rice
Any long grain rice you like, I like to use leftover or microwavable rice
1 Cup Uncooked
2 Cups Cooked
Salsa
Your favorite kind
1/2 Cup
Paprika
Hungarian or smoked preferably
1 tsp
Garlic Powder
1 tsp
Cumin
1/2 tsp
Hot Sauce (optional)
1 oz
Cherry or grape tomatoes
4 oz
Cilantro, fresh
1/4 Cup
Lime
1/2 Whole
Instructions
Mise en Place
1) Dice sausage into 1/2 inch pieces
2) Peel and dice onion
3) Remove stem and dice peppers
4) Halve or quarter tomatoes, lightly salt
5) Rough or finely chop cilantro
6) Quarter lime
Process
Uncooked Rice:
1) Start to cook rice according to package instructions minus 1/8 cup of water. When 7 minutes remain go to step 2.
Cooked Rice - start here:
2) Add 1 Tbsp of oil to pan and bring to medium-high heat. Add peppers, onions and sausage.
3) Cook 5-7 minutes, rarely stirring or until the ingredients are browned.
4) Add rice, garlic powder, cumin, paprika, salsa, hot sauce (optional), 1/8 cup of water and stir Let simmer until liquid is absorbed, just a few minutes, and salt to taste.
5) Remove from heat and serve topped with cilantro, tomatoes, a squeeze of lime juice and a little more hot sauce if you're feeling spicy.
Additional Notes:
If you love cheese, feel free to give it a little cheddar to make it better.
You don't have to make this with sausage. If you want to use shrimp, beef or chicken you can, just be aware of the cook times for each. It may be easiest to cook the meat separately and add near the end so it won't be overcooked.
You can jazz it up any way you'd like. Add a little tomato paste, some other herbs or go crazy and toss in some bacon!
