Instructions
Process
1) Preheat oven to 375° F
2) Mix together basil and honey in a bowl and set aside.
3) Lightly oil sheet pan and add salmon, skin side down. Salt to taste and spread basil-honey mixture all over top of salmon.
4) Bake for 20-25 minutes depending on the temperature you like your salmon.
5) Remove from heat, let rest for 5 minutes and enjoy!
Additional Notes:
If you don't want to use the basil paste, you can use fresh basil, chop it up and mix with the honey. I like the paste because a lot of the flavor is already extracted into the paste which mixes well with the honey and allows the flavor to cover more surface area.
I know I've said don't cook honey but I haven't tried an alternative to this yet, it's on the list. For now, this works really well.
If you want it rare, you may cook for 10-15 minutes. Use a meat thermometer to check.
**A special thanks to my friend Jess who introduced this recipe to me. I used to like salmon and like this, I love it!
