Ingredients
Leftovers from Buffalo Chicken Peppers
Buns
*Depends on how much you have leftover
1-2 Whole
Mozzarella or Parmesan (fresh), shredded
As much as you like
Ranch or Blue Cheese Dressing
As much as you like
Mixed greens (optional)
Enough for the size of salad you would like
Instructions
Mise en Place
1) Remove mix from inside of peppers and slice peppers into strips
2) Roughly chop mixed greens (optional)
Process
1) Heat skillet to high with ~1 Tbsp olive oil. Add peppers and cook for 2-3 minutes.
2) Reduce heat to medium and add mix from inside peppers. Cook for 2-3 minutes. (add additional buffalo sauce if mix seems dry)
3) While it cooks, spread a thin layer of butter or mayo on the inside of the buns and toast in a separate pan. Watch carefully to prevent burning.
4) Fill buns with the mix and add mixed greens on the side (optional).
6) Top with dressing and cheese and enjoy!
Additional Notes:
*Serving this with a side salad is great because every part of the mix that falls from the sandwich pairs well with some fresh greens!
