Cilantro-Lime Chicken

Ingredients
Chicken Breast, skinless
2 Whole
CIilantro, fresh
1 Cup
Garlic
2 Cloves
Honey
1/4 Cup
Lime
1-2 Whole
Tajin or crushed red pepper (optional)
1/2 Tbsp
Instructions
Mise en Place
1) Peel & mince (or grate) garlic
2) Rinse and roughly chop cilantro (stems included)
3) Halve and juice lime
4) Mix together honey, lime juice and 1-2 Tbsp olive oil in a shallow dish. Stir in cilantro and Tajin.
*If omitting Tajin or using crushed red pepper, also add 1 tsp salt
5) Add chicken to mixture, coat and let set in fridge, covered for 30- 60 minutes.
Process
1) Heat skillet to medium-high with ~1 Tbsp olive oil. Add chicken and cook 7-9 minutes on each side or until cooked through.
2) Remove chicken from skillet, set aside and let rest for 5-10 minutes.
3) You can use this for tacos, on a salad, over rice, in a sandwich or however you'd like. Enjoy!
Additional Notes:
*If you brine your chicken do not add any salt or Tajin (use crushed red peppers) to the marinade. A brine will add enough salt.
**You do not have to marinate in the fridge if only marinating for 30 minutes. Do not let the chicken marinate for more than 2 hours, this marinade is acidic and it will toughen the chicken the longer it marinates.
