Ingredients
Chicken Thighs, boneless, skinless

Onion
1 Whole
Potatoes
2 Whole
Mini-Sweet Peppers
3-5 Whole
Sesame Seeds
1-2 tsp
Bourbon Glaze
If you don't have the bourbon glaze, below are the ingredients to make a quick pan sauce:
1/3 Cup
Ginger, fresh
2 tsp
Garlic
2-3 Cloves
Soy Sauce
*Soy free: use liquid aminos
1/3 Cup
Red Wine Vinegar
2 tsp
Brown Sugar
2 tsp
Water
2 Tbsp
Instructions
Mise en Place
1) Peel and slice onion into strips
2) Rinse and dice/slice potatoes into pieces 1/4 inch thick
*without bourbon sauce
3) Peel & mince garlic
4) Peel & mince ginger
Process
1) Preheat oven to 350° F
2) Place foil on baking sheet and lightly coat with olive oil
3) Add onion, potatoes, sweet peppers and chicken to pan.
*with bourbon sauce
4) Pour sweet bourbon sauce over pan ingredients and top with sesame seeds. (optional) Go to step 7.
*without bourbon sauce
4) Add garlic, ginger, soy sauce, vinegar, brown sugar and water into a sauce pan.
5) Cook over medium-high heat for 5-7 minutes or until it reduces by half, stirring frequently.
6) Pour sauce over pan ingredients and top with sesame seeds. (optional)
7) Bake for 25-30 minutes or until chicken is 160° F. Remove from heat and let rest 5 minutes before serving.
