Ingredients
PICADO:
Chicken, Steak or Shrimp
Great way to use up leftover meat

Onion, medium

Green Pepper
1/2 Whole
Garlic
1 Clove
Butter
2 Tbsp
Heavy Cream
1/2 Pint
Garlic Powder
2-3 tsp
Tajin (optional)
2 tsp
Sour Cream
1/2 Cup
Shredded Cheese
I used mozzarella but you can use any kind you like, preferably a good melting cheese

REMAINING INGREDIENTS:
Corn Tortillas
You can use flour, I suggest corn

Scallion (green onion)
1 Whole
Cilantro (optional)
1/4 Cup
Lime (optional)
1/2 Whole
Lettuce (optional)
1/2 Cup
Sour Cream (optional)
2-4 Tbsp
Instructions
Mise en Place
1) Peel and dice onion
2) Rinse, destem and dice pepper
3) Peel & mince garlic (if you have a microplane/grater, you can use that)
5) Rinse and dice tomato (deseeding optional)
6) Rinse and slice scallion, keep white and green parts separate.
7) Rinse and shred lettuce (optional)
8) Rinse and roughly chop cilantro
9) Rinse and quarter lime
*10) If using uncooked meat, dice into 1/2 in cubes.
Process
*Uncooked meat
1) Add some oil to skillet and cook to the temperature you like. If you are using chicken, make sure it is cooked through. Set meat aside, covered.
* Leftover or cooked meat
2) Heat butter in skillet on medium, add green pepper, onion, white parts of scallion and garlic and cook for 4-5 minutes on medium-low heat.
3) Add heavy cream, garlic powder (yes, more garlic), sour cream and Tajin. Heat up to a simmer for 3-4 minutes.
4) Add shredded cheese and once melted, add meat.
5) While the cheese is melting, turn on another burner and heat up your tortillas over the flame. Watch them carefully to avoid burning! As you can see, mine got a little charred but I like them like that.
6) Top with shredded lettuce, sour cream, cilantro, salt and a squeeze of lime juice. Enjoy!
Notes
As you can see, this recipe doesn't include the rice or beans. For this meal I used leftover rice, added a can of diced tomatoes, a little salt and topping with the diced tomatoes and cilantro was all it needed. I just heated up a can of refried beans. A few short cuts are welcome here!
